Thai Soup


In a pot, and this is all "about"
Olive oil
Garlic
cook
Add
Carrots
Celery
Broccoli
Cauliflower
cook for a few minutes
add about 2 cups vegetable broth
bring to boil add
rice noodles
boil about 5 more minutes
add chopped kale
chopped green onions
also add to your taste
red hot chili sauce
soy sauce

This is a throw it all in a pot dinner.  Make for one or make for 4.  

Energy Bites

I am a snacker.  I love snacks.  And I am trying to cut out my afternoon cup of coffee.  So after searching for some granola type energy bars at the store and reading label after label I decided to make my own.  They turned out super yummy and everyone was asking for the recipe.  And they only took about 15 minutes to make.

5-6 pitted dates
1 cup nuts (I used raw almonds and cashews)
Pulse in a food processor until small chunks that stick together.

Dump that into a big bowl.
Add
1 cup Oats
2 Tbls Chia seeds
2 Tbls Hemp Seeds
1/3 cup Pumpkin seeds
1/4 cup dark chocolate chunks
Mix together then add
1/2 to 3/4 cup peanut butter
1 mashed banana
2 Tbls Coconut Oil

Stir together until all combined.  Then you can shape them however you want.  I used my Large scoop to measure out balls then flattened them like a cookie.  Placed them in individual bags and either eat right away or store in the freezer.  You can eat these right out of the freezer or leave them out for a little bit to soften up.  Enjoy!

Note, you can adjust any of the ingredients.  Add more or less to your taste.  You could also add some agave if you want them sweeter.  But I think the dark chocolate is enough.
