OK so I am not feeling great. At all. And what better to make you feel better than a bowl of noodle soup? So after searching the web and not finding a recipe that interested me I just decided to throw a bunch of stuff together. I rarely measure anything when I'm cooking. My style is to just go with it. So these are totally approximate.
Soup
1 T Olive Oil
1/4 cup onion
1/4 cup carrot
1/4 cup celery
1 clove garlic
Saute this in your pot for a few minutes
add
Pepper ( I love lots)
1/2 tsp rosemary
salt (totally up to you)
Stir in
1 can drained/rinsed chickpeas(garbanzo beans)
2 cups vegetable broth
1 cup water
bring to a boil
add 1 cup noodles (I used rice shell noodles. Gluten free)
boil for about 5-7 minutes.
in a small bowl mix 1/2 cup warm water with 1T corn starch
add that to the soup for a thicker base.
boil for a few more minutes and enjoy!
